In general, a distinction is made between clear and thickened soups. A seasoning liquid to a creamy thick addition to hot and cold dishes is called a sauce. Numerous recipe variations can be created on the basis of different basic sauces. Today, soups and sauces are made with different processes and marketed in different forms. Liquid soups and sauces
Liquid soups and sauces are products that are freshly prepared and packaged in various ways. Different procedures can be used to preserve the soups and sauces. Depending on the method chosen, the starches used are subject to different challenges. Therefore, a product used in the UHT process, for example, must have a long shelf life and high functionality in addition to heat stability. Our Emden® and Emflo® potato starches are the right choice here.
Canned soups and sauces
What is meant here by preserves are full-fat preserves that play a special role in liquid soups and sauces. As a result, this leads to a special challenge for the starches used. Our starches aim to achieve the necessary viscosity during filling of preserves, to regulate the heat transfer during canning and to improve the stability during storage. Our Emes®, Emflo® and Emden® starches are particularly suitable for this purpose.
Instant soups and sauces
Dry mixtures require a good dispersion process. Besides the functional Emflo® starches, Emfood Trading also offers Clean Label solutions. An Empure® starch developed especially for such applications can be stirred directly into boiling water without clumping. Various Emjel® starches are available for instant cold soups and sauces.
Emulsified soups and sauces
Salad dressings, mayonnaise or even dairy sauces are examples of emulsion-based products. These products require acid, shear and storage stable starches to achieve a creamy consistency and good hydration. Emfood Trading offers product solutions for both hot and cold processes. The use of our emulsifying starches also offers the possibility to replace or reduce other emulsifiers.
