Confectionery is a product consisting mainly of sugar or similar sweeteners. A distinction is often made between sweet pastries and confectionery.
Emfood trading offers numerous product solutions which optimise both texture and appearance as well as clarity and elasticity. Whether stabiliser, emulsifier, gelling agent or thickener, with different starches and proteins, the Emsland Group has an individual solution available. Particularly noteworthy are the excellent gelling properties of our pea starch; due to its high amylose content it allows the replacement of gum arabic and gelatine and offers the Emfood trading cost-effective alternatives for vegan products. Based on natural raw materials, our modifications of potato and pea starch are also suitable for the vegan market.
Chewing gum and jelly products
Gelatine is traditionally used for the production of gum and jelly products, but can also be used in combination with other stabilisers and gelling agents. The texture in these products can vary from soft and short to hard elastic. The product properties are influenced by the choice and quantity of raw materials used. Emfood offers several modified starches for use in gum & jelly products which have excellent gelling, texturing and stabilising properties in wine gums, fruit jellies, liquorice and extruded confectionery products and achieve the desired texture, such as elasticity.
Hard candy
Hard candies include hard candies, lollipops or caramels. Caramels are a beige to dark brown treat made from variations of caramelised sugar, are also prepared in combination with flavours and are found for example in fillings, sweets and dessert applications. Hard candies can also be prepared from a combination of sugar and gelling agents. Emfood's modified starches contribute to improved processing and shelf life.
Airy delicacies
These sweet treats are whipped or airy sweets with a high sugar content, glucose syrup, and whipping, frothing and/or stabilising agents as well as flavour. Gelatine is often used as a whipping/stabilising agent as standard. Starch is very suitable in this segment as a partial gelatine substitute. Starch takes over the gelling and texture characteristics of gelatine. Due to a different melting profile between gelatin and starch, partial gelatin replacement will result in aerated products with a longer and better shelf life (required in tropical conditions). Starch cannot make foam, therefore a protein is required. This protein can be a reduced amount of gelatine or another foam forming protein (preferably vegetable because of the vegan issue). The ultimate goal is to develop products and formulations for vegan carbonated products.
Fillings
Sweet fillings can contain a wide variety of raw materials as well as gelling agents and stabilisers such as pectin, gelatine, starch, alginates, xanthan gum or guar gum. Emfood keeps both modified starches and Clean Label starches ready which also have excellent functionality and thickening properties during storage for both cold production and cooking processes.
Modified sweets
Emfood offers an attractive alternative to gum arabic in the field of sugar confectionery. Our modified starches offer excellent adhesion and film formation properties, preventing unwanted moisture migration into the ticking.
Chews
Chewing tablets are also based on sugar and glucose syrup. In addition to these ingredients, gelatine and fat are used, both to improve the texture and mouth feel of the chewing tablets. The main difference with the shaped confectionery products (as mentioned before) is the way they are processed. Chewing tablets are characterised by a typical pulling stage during production. During pulling, air is absorbed and the clear sugar solution becomes cloudy or opaque together with a short bite. Emfood is able to supply producers of chewy snacks with a wide range of starches. With these starches and years of experience in this field, it is even possible to produce fat-free and gelatine-free chewing snacks.
